Soak first, about 8 hours or so. I cook it like other beans except

I use asian flavors, lots of ginger, scallions, garlic, cilantro if

you like it, maybe some lemon grass if you have some around, could

trow in some dried shitakes and carrots to complete it. Also perhaps

a little dark sesame oil. Enjoy, Cabrita

Oh, and let's not forget, some salt too! ;-)

 

I put salt in beans after they are already cooked and soft though, I

find they are more tender cooked without salt first...

with them? I was given a bag and it has no

You could always sprout them, for homemade bean sprouts! Just take a jar, a

piece of screen or something similar like a mesh or gauze, and soak the beans in

some water in your cupboard overnight. Then rinse and drain them, up side down

in a bowl, tilted sideways so air can get in. Rinse and drain them every 12

hours or so, until you have nice long sprouts! Yum! Perfect for Pad Thai, or

other Oriental dishes!

Mung beans may either be sprouted or cooked as you would aduki beans,

approx. 45 minutes to an hour.

In Sri Lanka they make a breakfast with warm cooked mung beans, fresh

shredded coconut and pieces of dried red chilis. They serve it with

buffalo curd but plain yogurt makes a great sub.
