I cook it like other beans except I use asian flavors, lots of ginger, scallions, garlic, cilantro if you like it, maybe some lemon grass if you have some around, could trow in some dried shitakes and carrots to complete it. Just take a jar, a piece of screen or something similar like a mesh or gauze, and soak the beans in some water in your cupboard overnight. Then rinse and drain them, up side down in a bowl, tilted sideways so air can get in. Rinse and drain them every 12 hours or so, until you have nice long sprouts! Yum!
