This a large city with a diverse population which will make it easy for me to find the ingredients that I need. My primary vegetarian cooking interest is East Indian vegetarian cooking, but would like to broaden my recipe base to accomodate more. Do you have one for mutter paneer? I have been making it my own way, it us pretty good but I want to try it other ways. Did you see our recipe files yet? Guest guest Posted December 12, 2007 Report Share Posted December 12, 2007 No, I haven't seen the recipe index yet. Just joined today but plan on seeing it soon. Haven't made mattar paneer yet. Isn't that a type of cheese? I believe the recipe I've seen (my cookbook) they want you to reduce the milk and sit next to the stove and stir for hrs and hrs! I don't have that kind of time! I make my own kind of mattar paneer by heating up milk over a double boiler until it simmers and then add lemon juice to separate the whey from the solids and then press it in cheesecloth, then crumble it. Probably adding lemon juice sounds unorthodox, but it is easier. Anyway, after it is incorporated into a recipe, the spices add to it.
