Lime Zucchini Marmalade Recipe

4 cups coarsely shredded zucchini --

(about 2 lbs.)

2 cups water

1/2 cup fresh lime juice -- (about 4

limes)

1 package powdered fruit pectin

5 cups sugar

3 tablespoons sliced lime peel

 

 

In a large Dutch oven, combine zucchini, water, lime

juice and peel. Bring to boil and boil gently for 10

minutes. Stir in pectin, return to boil. Stir in

sugar. Return to a hard boil that cannot be stirred

down. Boil stirring constantly for 2 minutes. Remove

from heat, stir 5 minutes to keep fruit from rising.

Ladle into hot sterilized jars and seal.
