Two recipes - Pecan Divinity and Peppermint Divinity

I found the original recipe somewhere on the net, but it is a pretty basic one.

Never never never try to make divinity if the humidity is high or it is raining.

Also, unless you really need to work out those upper arms, you'll want to use

the electric mixer for this.

 

Pecan Divinity

1 1/2 cup sugar

1/2 cup water

Pinch salt

1 jar marshmallow cream (does not have gelatin in it)

1 teaspoon vanilla extract

1 cup chopped pecans

 

 

Boil sugar, water, salt to hard ball stage 250 degrees. Put marshmallow creme

in a mixing bowl and stir in hot syrup. Beat until stiff and stands in peaks.

Fold in vanilla and nuts. Drop by teaspoon onto a waxed paper.

 

Peppermint Divinity

1 1/2 cup sugar

1/2 cup water

Pinch salt

1 jar marshmallow cream (does not have gelatin in it)

1/2 teaspoon peppermint extract

1 cup crushed candy canes

 

 

Boil sugar, water, salt to hard ball stage 250 degrees. Put marshmallow creme

in a mixing bowl and stir in hot syrup. Beat until stiff and stands in peaks.

Fold in peppermint extract and crushed candy canes. Drop by teaspoon onto a

waxed paper.
