Guest guest Posted December 17, 2007 Report Share Posted December 17, 2007 Butterbean Dip or Spread, Hummus Style 7 ozs. butter beans canned drained 1 garlic, clove peeled and roughly chopped 3 to 4 tbsps. olive oil 1 lemon, juice only 1 lemon, zest only handful fresh cilantro or coriander leaves salt to taste freshly ground black pepper Place the butterbeans, garlic, olive oil, lemon juice and zest, coriander and seasoning into food processor and blend together until smooth. You can stuff celery with it. Transfer the dip to a serving bowl and serve. Good with chips or pita chips.
