Guest guest Posted December 18, 2007 Report Share Posted December 18, 2007 Fat Free Blueberry Muffins These muffins are rich, moist and made without any oil or fat. 2 Tbs Flax Seed 4 c Whole Wheat Pastry Flour 6 Tbs Water 1 Tbs Baking Powder ½ c Sweet Cloud Rice Syrup® ¼ c Granulated Cane Juice ½ c Applesauce 1 tsp Cardamom 1½ c Soymilk 1½ c Blueberries Pinch of Sea Salt 1. Preheat oven to 350º. Lightly oil muffin tins. 2. Place flax seeds and water in food processor and process until thick. 3. Add rice syrup, applesauce and soymilk and process until blended. 4. Add flour, baking powder, granulated cane juice, and cardamom. 5. Process batter just until mixed. 6. Fold blueberries into batter. 7. Spoon batter into muffin cups to fill ¾ full. 14. Bake at 350º for approximately 25 minutes until toothpick comes out clean. 15. Cool in pan 5 minutes, then remove to wire rack.
