I thought I will tell you there are many things you can eat so you don't feel lack of nutrition. I will write one recipe at least a week from my daily cooking. I am Indian and do make very healthy food. You can go to Indian grocery store in your area and buy all kinds of lentils and spices. Lentils are very easy to cook and are high in protein and delicious to satisfy the taste buds. also lots of different vegetables which are high in vitamin. Here is the basic recipe for lentil(daal) any kind but start with Moong daal. 1 cup daal 4 cup water 1tsp salt 1/2 tsp turmuric powder 2 table spoon ghee(refind butter) 1/2 tsp cumin seed 1/2 tsp red chilli powder Wash daal in cold water and add 4 cup water in a pot, if you have pressure cooker great ( must have for indian cooking), boil on high heat, then reduce to mediam heat,cover and boil until its soft, stir every few minutes add water if needed. you can keep the consistancy as you like. Keep aside, now in a small pan heat tha refind butter when hot ass cumin seeds when its pooping turn the heat off and add chilli powder in it and add to the daal. if you like sour taste add lemon to taste. I would myself like to learn more indian ways to prepare greens. For example kale, collards and beet greens. I think one of them is called palak in hindi? Here we can find those and many more, including the chinese greens like gai lan (yum!), bok choy and many more. I had posted recipe for " paalak kaapaa " (spinach curry) a couple of days ago. I would request it to be tried. I also request Nina to try it if it is not already in her recipe book. I would try ti paste some more recipes of Kumauni dishes which are simple but are appreciated by all who have tasted. Do you have a recipe for Aloo Vindaloo? That is one of my favorites. When we do go out for Indian food, we always go to the lunch buffets. I always have much more of a choice than my meat-eating friend does, but there never seems to be any Vindaloo offerings. Looking forward to adding your recipes to my " To Try " list! I can get most vegetables in my area, potatoes, spinach, peas, cauliflower,peppers, onions, carrots.
