need veggie appitizer recipe

well this sounds good to me....if you are tired of it, like GeeGee suggested

there has to be something in the files. What about an antipasto plate? You

I have to go to a lunch on Fri and was asked to bring an appitizer that I would

eat.... I am at a loss for ideas without cooking like crazy. I have looked

through the files for ideas, but nothing looks really good to me. I don't like

or eat any cheese or dairy product (cream cheese, sour cream, etc)... and I

don't like tomatoes or mushrooms.

 

Now you see where the trouble lies. I could work up a veggie/cracker platewith

a white bean and rosemary spread but other than that I am at a loss.

Do you have a good and relatively easy recipe for me to try? Maureen

What????? You shouyld scan the appetizer, dips and salas area

again. What about one of the hummus or guacamole recipes?????

There are hundreds of good recipes you can use.

How about a pita or wrapper with a hummus and cuke

filling, or peanut butter, or black bean Mexican

style, or.......well there are so many choices.

SPINACH AND CUCUMBER SPREAD

Makes: About 2 cups

 

Delicious served with crispbreads and whole-grain crackers, this

spread will be especially appreciated by those who eat no dairy products.

 

1/2 cup finely chopped, seeded cucumber

10 ounces silken tofu (if unavailable, substitute soft tofu)

10-ounce package frozen spinach, thawed, moisture completely

squeezed out Juice of l/2 lemon

1 bunch finely minced scallion (green onion)

1 tablespoon minced fresh dill, or 1 teaspoon dried dill 1

teaspoon seasoned salt, more or less to taste 1/4 teaspoon dried basil

Freshly ground pepper to taste

 

Spread the chopped cucumber over two or three layers of paper towel.

Cover with another two layers, then place a cutting board or some

other weight on top. Let stand for 30 minutes or so.

 

Combine the remaining ingredients in the container of a food processor

or blender. Process until the spinach and tofu are well incorporated.

Transfer to a serving bowl and stir in the cucumber. Cover and

refrigerate until needed.
