Guest guest Posted December 25, 2007 Report Share Posted December 25, 2007 ZUCCHINI MOCK CRAB CAKES 2 1/2 C. grated zucchini 1 egg, beaten 2 Tbs. butter or margarine, melted 1 C. seasoned bread crumbs 1/4 C. minced onions 1 tsp. Old Bay Seasoning - or to taste 1/4 C. all-purpose flour 1/2 C. vegetable oil In a large bowl, combine zucchini, egg, butter or margarine. Stir in seasoned bread crumbs, minced onion and seasonings. Mix well. Shape mixture into patties. Dredge in flour. In a medium skillet, heat oil over medium-high heat until hot. Fry patties until golden brown on both sides. NOTE: You may add chopped pimento to the mix along with some chopped jalapenos for a little zest. Very nice served with a side salad of mixed greens for a light lunch.
