Patatokeftedes - Greek Potato Balls

 

2-3 Whole Egg Beaten

3-4 Teaspoon Feta Cheese, Grated

4 oz Flour

1 Pinch Mint, To Taste

1 A Little Oil

1-2 Pinch Parsley, To Taste

1-2 Pinch Pepper, To Taste

2 1/4 lb Potatoes

2-3 Pinch Salt, To Taste

 

 

 

 

 

Boil the potatoes in salted water until tender.

 

Strain and mash the potatoes.

 

Add the eggs, feta, salt, pepper, mint and parsley.Mix

well and form into small balls.

 

Roll the balls in the flour and fry in hot oil. Turn

and continue frying until browned.

 

Drain well and serve hot.

 

Servings: 6

ChupaNote: these are great as a side dish or a

starter. I added 1 t. red pepper flakes instead of the

pinch of pepper. It could have used more spice.
