Guest guest Posted December 27, 2007 Report Share Posted December 27, 2007 when I make acorn squash I cut it in half, remove seeds and slime, turn it upside down on a few tbs. of water, then microwave. If you need to bake it with other veggies, bake it only until skin is easily removed, then chunk. I just cook it until soft, then scoop out of the skiin and put it into a bowl. I find that if I put squash, acorn and butternut so far in the roasting pan with the onions, potatoes and garlic that they never seem to notice. Where we live it is hard to get good produce this time of year and eat alot of potatoes. I did work at getting the peel off but will not plan on using it with other veggies again. That was a pain.
