I am trying to learn veg. cooking, I don,t seem to have any incentive to cook either with or without meat. I wind up eating a peanut butter sandwich or a dish of cereal just to get it out of the way. My husband gets home well before I do so he does a lot of the cooking. Having frozen veggies in the freezer is great you can add them to pasta or soup. I keep cartons of Veggie broth on hand, also whole wheat pasta and canned chopped tomatoes. Potatoes can be cooked in the microwave in 5 or 6 minutes top heat up some mixed frozen veggies top with some kind of protein and you have a quick meal. Look for recipes with minimal ingredients/prep work. Once you feel a little success you'll feel more adventurous.
