Guest guest Posted December 31, 2007 Report Share Posted December 31, 2007 Zucchini with Lemon-Basil Dressing 1 lb. medium zucchini, about 4 2 1/2 tbsps. fresh lemon juice 1 tsp. grated lemon peel 1 tsp. Dijon mustard 1/3 cup olive oil 1/2 cup thinly sliced fresh basil 1/2 cup paper-thin slices red onion salt and pepper to taste whole basil leaves lemon slices Trim zucchini and cut in half. Cut halves into 1/2-inch sticks. Steam several minutes or until just crisp-tender. Transfer to a large bowl and allow to cool completely. In a small bowl, combine lemon juice, lemon peel and mustard; gradually whisk in olive oil.Stir in basil and onion. Season with salt and pepper. Let stand at room temperature one hour, stirring occasionally. Add dressing to zucchini and toss gently. Let stand one hour at room temperature for flavors to develop, stirring often.
