Hummingbird Cake

I was so excited to see another vegan cake recipe, but the instructions ask for

eggs. Are you replacing eggs with applesauce? Sounds good.

This is a very good cake! Just remember that you do have to have a large bowl to

mix it all in....Hummingbird CakeIngredients:3 c. flour2 c. sugar1 tsp baking

powder1 tsp salt1 tsp cinnamon1 c. vegetable oil¾ cup applesauce1 ½ tsp vanilla8

oz can crushed pineapple – undrained2 cups bananas – crushed2 cups pecans –

choppedMethod:Sift flour, sugar, baking powder, salt & cinnamon into LARGE bowl.

Add oil, eggs, vanilla, pineapple, bananas, & nuts. Stir by hand until mixed. DO

NOT BEAT!!Pour into a 10 " tube pan and bake at 350 for 1 hour and 10 min.Cool

I just posted the recipe for this cake. When I was converting it to

a vegan recipe (which is the one I use), I forgot to take out all

mention of eggs. I do apologize for this. The corrected recipe is:

 

Hummingbird Cake

Ingredients:

3 c. flour

2 c. sugar

1 tsp baking powder

1 tsp salt

1 tsp cinnamon

1 c. vegetable oil

¾ cup applesauce

1 ½ tsp vanilla

8 oz can crushed pineapple – undrained

2 cups bananas – crushed

2 cups pecans – chopped

Method:

Sift flour, sugar, baking powder, salt & cinnamon into LARGE bowl.

Add oil, applesauce, vanilla, pineapple, bananas, & nuts.

Stir by hand until mixed. DO NOT BEAT!!

Pour into a 10 " tube pan and bake at 350 for 1 hour and 10 min.

Cool and frost with cream cheese frosting, if desired.

It is a delicious cake and sells first at Church bake sales, and is a big

favorite at the Revival dinners!!

This looks like a really good vegan cake. What is a tube pan?

a tube pan is a bundt pan.
