Just remember that you do have to have a large bowl to mix it all in....Hummingbird CakeIngredients:3 c. flour2 c. sugar1 tsp baking powder1 tsp salt1 tsp cinnamon1 c. vegetable oil¾ cup applesauce1 ½ tsp vanilla8 oz can crushed pineapple – undrained2 cups bananas – crushed2 cups pecans – choppedMethod:Sift flour, sugar, baking powder, salt & cinnamon into LARGE bowl. Add oil, eggs, vanilla, pineapple, bananas, & nuts. Stir by hand until mixed. When I was converting it to a vegan recipe (which is the one I use), I forgot to take out all mention of eggs. I do apologize for this. The corrected recipe is: Hummingbird Cake Ingredients: 3 c. flour 2 c. sugar 1 tsp baking powder 1 tsp salt 1 tsp cinnamon 1 c. vegetable oil ¾ cup applesauce 1 ½ tsp vanilla 8 oz can crushed pineapple – undrained 2 cups bananas – crushed 2 cups pecans – chopped Method: Sift flour, sugar, baking powder, salt & cinnamon into LARGE bowl. I forwarded this recipe to my niece. She s an avid cake baker and is crazy for Hummingbirds. Life is way too much fun sometimes.
