Tahini-Mushroom Gravy - 2 pts, 9g carbs, 2g fiber

Amount Measure Ingredient -- Preparation Method

1/2 cup dried porcini mushrooms

2/3 cup hot water

1/4 cup tahini -- (sesame seed paste)

1/2 cup cold water

1 tablespoon dark miso

juice of 1 lemon

 

Place the dried mushrooms in a bowl, cover with the hot water, and let stand

about 10 minutes to

soften. Then drain the mushrooms through a strainer, reserving the liquid. Tear

the mushrooms into

pieces.

 

Place the tahini in a small saucepan, and gradually beat the reserved mushroom

liquid into the

tahini with a fork. Beat in the cold water until smooth, and add the mushrooms.

 

Place the saucepan over low heat and cook, stirring continuously, until the

sauce just starts to

boil.

 

In a small bowl, combine the miso with a little of the hot sauce just until the

miso is melted.

Stir the mixture into the sauce along with the lemon juice, and heat briefly

without boiling.

Serve immediately, or store in the refrigerator for a day or 2. Rewarm over very

low heat and

cook, stirring gently, until warm. Do not boil.
