Guest guest Posted January 6, 2008 Report Share Posted January 6, 2008 * Exported from MasterCook * Graham Kerr's Basic Pie Crust - 2 pts, Carbs 10g, Fiber 0g Recipe By :The Complete Quick and Healthy Diabetic Cookbook, 2nd ed, by American Diabetes Association Serving Size : 8 Preparation Time :0:00 Categories : LowCal (Less <300 calories) LowerCarbs Vegan WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup cake flour 1/2 teaspoon sugar 1 pinch salt 1 tablespoon non-aromatic olive oil 2 tablespoons hard margarine -- (65% vegetable type), frozen for 15 minutes 1/2 teaspoon vinegar 2 tablespoons ice water In a medium bowl, combine flour, sugar, and salt. Stir in oil. Add the margarine and cut in with a pastry cutter until the mixture is the size of small peas. Add the vinegar and ice water and mix with a fork until the dough starts to hold together. Gather into a ball, wrap, and refrigerate at least 30 minutes before rolling out. Roll out pie crust to fit an 8 or 9-inch pie dish. Lay rolled dough in the pan without stretching it, and crimp the edges. If the recipe requires a baked pie crust, preheat the oven to 425F. Prick the crust wit a fork and lay a piece of parchment or waxed paper in the pie shell. Pour in enough dried beans to cover the bottom (this prevents the crust from bubbling up while baking). Bake for 8 minutes or until golden brown.
