I joined the groups a couple of weeks ago and have been trying to get up the courage to jump in. Well here goes, I am trying to make the transition to a vegetarian diet. But, yes but, there is always a but. Here is were i need help. I am an american living in egypt. There really isn't anything available here for a vegetarian diet. There really aren't any green leafy vegetables, a limited amount of beans and no protein products like tofu or seitan. So any advice or help would be greatly appreciated. My question is what is wheat gluten? I saw that in the recipe for making seitan or wheat meat that i would need gluten. Guest guest Posted January 10, 2008 Report Share Posted January 10, 2008 Wheat gluten is the protein part of wheat flour, has negligible startch or bran. In the US you can buy it already refined and making gluten is then just a matter of adding water, kneading and stewing it or baking it in a broth. I have also made seitan starting with regular bread flour and washing the starch away. It is a time consuming task, but there are web sites that describe the process. If you have the time and you really want tofu and seitan, you can make these yourself starting with regular wheat flour for seitan, and starting with soy beans for tofu. It is time consuming but not that hard. Your choices are limited, but perhaps you can get your greens frozen? and you can substitute beans in many recipes, just use what is available to you, and substitute canned or frozen ingredients, and the beans you can get. Guest guest Posted January 10, 2008 Report Share Posted January 10, 2008 You can make your seitan from regular very fine ground wholewheat flour or regular white flour. It just takes longer. The Vital wheat gluten is the same thing with the first step, the washing, done for you. Let me know if you need directions.
