I have been wanting to get all my veggies in everyday for sooooo long... part of this is that there is often so much preparation involved, and other things are just FASTER and EASIER> **sigh** So.... I am looking for tips to speed preparation up (such as doing up a whle bunch of stuff on Sunday for the next few days) AND I am looking for SNACK ATTACK ideas!! Thank you everyone and happy 2008!! Guest guest Posted January 10, 2008 Report Share Posted January 10, 2008 One of my favorite snack attack that I enjoy is to take Cascadian Farms Vanilla Almond Cereal and put it in a cereal bowl and stir in sliced fresh fruit and some Dannon Vanilla Yogurt(it comes in a large container). Another is one that Donna told us about on here. Take a Whole Wheat Tortilla and spread it with crunchy peanut butter. Put a whole banana in it and wrap it up. You can spinkle some hemp seed in it also to add some Omega's. Of course there is always the Ants on a Log, which is Celery stalks filled with crunchy peanut butter and raisens lightly pressed into the peanut butter. Look in our Sandwich folder for some quick sandwich ideas. For quick meals here are some ideas. Make my Vegetarian " MeatLoaf " or Meatos in the " not Cow " folder under Substitutes for Meats Recipes. They are great and then with leftovers you can make great sandwiches, sliced up on some Whole wheat bread spread with Veganaise or Mayo. Also the Haystack Recipe in the Mexican Folder is quick and nutritious for a meal. Frozen veggie are quick to cook up for meals. Fresh Red Skinned Mashed potatoes are easy and yummy. Serve with some cooked or canned green beans(drain) sauted in a hot skillet with a little Smart Balance Light/Butter and some garlic... Then open a can of Loma Linda " Swiss Stake " and heat with the gravy from the can.
