Blood Orange Olive Oil and Balsamic Vinegar Dressing

1/4 cup Balsamic Vinegar

1 tablespoon Dijon Mustard

1 tablespoon shallots, minced

1 tablespoon Italian Parsley, minced

1/4 cup blood orange juice, (I used 1/2 cup and left out the vinegar)

1/2 cup olive oil, or to taste

Salt and Pepper to taste

2 tablespoons Blue Cheese crumbled, (optional)

 

 

 

 

Whisk together blood orange juice, vinegar, mustard, shallot, Italian Parsley,

salt and pepper.

While continuously whisking drizzle in olive oil and whisk until emulsified. Add

blue cheese just

before serving.

ChupaNote: this was lovely with walnut oil also. If you like cilantro, this is a

good dressing for

it.
