Guest guest Posted January 14, 2008 Report Share Posted January 14, 2008 Spinach and potato pancakes Moms cookbook years ago, hubby doesnt like spinach so we dont use it in this recipe anymore 1 pkg. (10 oz) fozen choppen spinach, thawed & squeezed dry 2 C. shredded Zucchini 1 med. Potato peeled, shredded 1/4 c. finely chopped onion 1/4 c. flour( can use rice flour) 1/4 - 3/4 tsp salt 1/2 tsp. pepper 1/4 - 1/2 tsp. gound nutmeg 1 egg substitute, needs to be a binder Applesauce, optional In a bowl, combine the first 8 ingred. Stir in egg subsititute mix well. Drop batter by 1/4 c. into a well greased hot griddle. Flatten to form patties. Fry until golden brown. Turn and cook until second side is lightly brown.
