There is a wonderful vegetarian restaurant in Middletown, though I don't like going there alone. But they sure had good food! I don't know of any others that are remotely local though. I just ask if they have Pizza Prima Vera, which means it's all vegetables, no meat. Or I order a pizza with double pineapple, green peppers and onions... Hawaiian style without the meat, which in Hawaii (my ex was in the Navy so we lived there awhile) was Canadian Bacon, but here on the mainland is usually ham. That doesn't help with the cheese issue, I guess. Maybe you could bring in your own cheese and get a little discount? Now I'm allergic to tomatoes if I have more than a tiny amount, so can't eat much restaurant pizza anyway! I can probably get away with a slice. I make pizza at home using a whole wheat or multigrain flat bread for my crust. I make a white pizza with Alfredo sauce and add MSF* soya sausage and cheese and veggies as desired. Or I use pesto sauce, and a spread of garlic hummus on top of that, and then whatever appeals and the cheese on top. Pine nuts or chopped walnuts are good on top too! Bake either for seventeen minutes at 400 degrees. And of course, you can also use tomato sauce if you're not allergic! It only takes about ten minutes to assemble, so it's probably faster than waiting for delivery! Alfredo and pesto sauce are staples in my fridge, as I also use them on pasta and even stir fry at times. I also have a bag of frozen chopped spinach and one of sliced multi-colored peppers in the freezer at all times, as they get used on my pizzas or in my quesadillas and in omelettes. Do others have staples they can't live without? *For future reference MSF=Morning Star Farms. Their sausage patties are delicious, and I use them a lot! I just got home from doing a Curves workout followed by taking Shaman for a mile and a half walk, so I'm feeling really good today! We order a pizza Hawaiian style without the meat (with pinapples or whatever), then cut up slices of Yves brand meatless Canadian Bacon and fry them up in a little smart balance or oil, and add it on top of the pizza. Delicious! Of course you can make the entire pizza at home too. When I make pizza at home I add crumbles of Morningstar Farms sausage patties.
