It must be stored in the refrigerator and used without heating. It is best for salad dressings or pouring over popcorn. Olive oil is an extremely stable oil. Even at high temperatures it does not create trans fats. It is appropriate for any type of cooking. Also, flax oil imparts a stronger, different taste than olive oil. I take a spoonfull daily and like the nutty flavor. You can add it to oatmeal (after it's cooked), yogurt, or spread on toast. It also adds a great flavor to cooking. Hwwever, I only use flax seed oil to make salad dressings. It makes a great home made mayonnaise. Where I purchase it, it is always refrigerated. It is very unstable at room temperature and warmer. I understand that it oxidizes very quickly.
