I thanked Nan for letting us use it. MOCK TURKEY SPREAD 2 large tomatoes peeled, chopped. 1 onion finely chopped 2 tabs. grated cheese 3/4 cup fresh white breadcrumbs 1/2 tea. salt pinch pepper pinch mixed dry herbs or poultry seasoning chunk of butter (30gms) 1 egg Put all ingrediants (except egg) into saucepan on low heat, simmer until onion is cooked remove from heat, add beaten egg. Return to low heat but do not boil. Finally add 3/4 cup fresh white breadcrumbs, stir thoroughly. When cool.place in jar and keep in refrigator. Use as sandwich spread or on toast. Tip I found that 1 tablespoon pasta or tomato sauce adds to taste, if tomatoes out of season, also microwave chopped onion for about 45 sec. makes sure that the it is cooked through.
