Red Lentil Delightful Soup

I adapted this from 2 recipes. I love this. As soon

as I was done with the pot of soup, I made it again 2

days later. It freezes well too.

Red Lentil Delightful Soup

 

1 1/2 cups red lentils (not brown or green)

2 Tbls. oil (I used olive oil)

1 brown onion, chopped

4 garlic cloves, minced or squeezed

1 tsp. curry powder of choice (mild, med. or hot)

2 Tbls group cumin (yes that is corerect! )

1 15 oz. can chopped tomatoes with liquid, (I used

Italian one time and Mexican the next and both were

good)

1 Tbl. honey or maple syrup

2 or 3 whole bay leaves

1 Tbl. red or white wine vinegar

salt & pepper to taste if needed

 

Heat oil in a large saucepan or Dutch oven over med.

heat. Saute onion and garlic for 4 or 5 mins. Stir in

the red lentils, curry powder and cumin and cook until

lentils and oil are coated and fragrant from spices.

Stir in tomatoes with juice, bay leaves and honey, and

add 7 cups of water. Taste and season with salt &

pepper. Bring to a boil, cover pan and turn flame to

simmer. Simmer on low for 20 minutes or until lentils

are soft and falling apart and soup is thick. Add a

little water if needed. Remove bay leaves, still in

the vinegar and serve.

ok Donna, tell us what group cumin is......... You said " yes that is correct "

after it.

This sounds yummy and perfect for anytime, but especially on a cold day......

Thanks for sharing this. I've been waiting for this, since you were talking

about how much you liked it the other day.........

It calls for a large amount of ground cumin and I

didn't want anyone to think I made an error, it really

balances out in flavor. I meant ground not group LOL

I will file the recipe now and correct that. Don't

skip any ingredients and plain canned tomatoes will

work too.

I'm so sorry it took me such a long time to post.

It's almost dusk and there is a dark shadow across the

computer screen so I won't post another recipe until

hopefully tomorrow.

LOL well I thought you might have meant ground, but wanted to check because of

your comment. No problem, I'm queen of the typo's too. Thanks.

You're right that is a fair big of cumin. Bet it makes it good. I recently put

some toasted cumin seeds in a lentil soup and I loved the crunch and flavor of

that ... I might even add some of those to it when I make it.
