Meato's Loaf - Repost

This is one of my very favorite recipes. It is an unusal combination of

ingredients that is just delicious!

Meato's

1 cup Peanut Butter

2 - 16 oz. cans Petite Diced tomatoes with Green Chilies or Jalopeno's

1 tsp. Sage

1 c. Onion, diced

1 tsp. Salt

3/4 c. flour(more or less)

 

Mix all the ingredients, adding the flour until it is thick like cake batter

mixture. Put into a sprayed casserole dish. Bake @ 350 for about 1 hr.

Check middle for being done. Turn off the oven and leave in a closed oven

while until the oven cools off

This sounds great, but how is it eaten? As a meatloaf, on a sandwhich?

Eat it hot as a loaf, baked in a casserole dish. You can also use left overs,

heated or cold, to make wonderful sandwiches on some Whole Wheat bread spread

with some Veganaise or Mayo.

I tried this tonight. My husband, who is a carnivore said it was quite

acceptable. I did not like it, though. I think the reason is that I absolutely

loath, detest and abhore peanut butter. I had to smell it while it was cooking

and by the time it was ready to eat all I could still smell and taste was

peanut butter.

Telling you that my husband liked it though, is high praise.
