Today's my first day as a member, I'm really looking forward to learning some new recipes and tips. I'm the only vegetarian in my family or social cirlcle, so I'm labeled as " picky " . I'm sure you guys know all about that Anywho- I've been a quinoa fan for years, but instead of cooking it in water I cook it in vegetable broth, or orange juice, or both. It really gives it a rich flavor that water just doesn't accomplish. I usually do 1 cup rinsed quinoa (I use a mesh colander/strainer) with 1 cup veg broth and 1 cup o.j. Yesterday was a gorgeous, warm (for winter) day. We are very grateful for the ability to live here, although the high prices and crowds can get a little exhausting at times. Denver is a great ciy- small yet full of really cool venues and activities. Donna- I've never toasted the quinoa first in a skillet, but I'm pretty intrigued so perhaps I will try that tonight. Have you ever toasted it? I forgot to mention in my first post- a lot of people ask me what I do with quinoa once I've cooked the quinoa- and my favorite thing to do is to make an easy cold salad- I mix in chopped veggies like bell pepper, onion, and tomato and add a splash of olive oil and balsamic vinegar and some avocado slices. We boast of having sunshine 365 days per yr. However it can still be 30 below zero..LOL I dry skillet toast Quinoa, rice,lentils and even pasta before cooking. Gives a whole different taste. If you are ever in the Summit County area you should try out the Himalayan restaurant on Frisco main street if you like Indian food. I could eat there every day, but I really love Indian food.
