They are too coarse to go in salad (texture is rough) but I was wondering if anyone has cooked them and eaten them (and survived LOL). I hear carrot tops are slightly toxic so I don't want to risk it. I have been growing beets too, I love the beet greens! I have been using them in salads raw. They cook very fast, little longer than spinach and a little faster than chard. They are not bitter at all, you will love them. I have a few recipes in the files. I will repost for you. Guest guest Posted February 1, 2008 Report Share Posted February 1, 2008 You can make a nice and fresh salad by slicing thinly fennels and radishes, and adding the greens from both, roughly chopped.
