Is this one of those foods that are so perishable that you have to buy them the day you intend to eat them? I have a recipe for spring rolls from the "Crazy Plates" cookbook that I have made a few times and really enjoy, but I have to make them the day I buy the sprouts, which is not always convenient. Hi Amy,

 

Here's what my book says about freezing bean sprouts.

 

These may be frozen for short periods only. They will not remain

crisp on thawing so are only suitable for stir-fries. Choose very

fresh, pre-packed varieties. Avoid any that are discolouring.

 

To prepare and freeze :

 

As these are pre-packed, no preparation is necessary.

 

Storage time :

 

1 week.

 

To Thaw and serve :

 

Cook from frozen, adding to stir-fries for the last 3 minutes

cooking time.

I have never frozen them myself but have bought frozen vegie mixes with bean

sprouts in them. They were just fine.
