Hi Mike,

I have a copy of the book you mentioned but I can't see a recipe of

that name. There is one called 'Baked Chili Rellenos' so I thought I'd

post it just in case it's the one you are looking for.

BAKED CHILLIS RELLENOS

(from Deaf Smith Country Cookbook by Marjorie Winn Ford, Susan Hillyard

and Mary Faulk Koock. Published by Avery Publishing Group.)

Serves 4-6

8-10 long (5 or 6 inches) green chiles (mild)

10 ounces jack cheese, grated

5 eggs, well beaten

2 tablespoons butter

1/2 teaspoon sea salt

1/2 teaspoon pepper

1/2 teaspoon cumin powder

Roast, peel and seed the chili peppers. Layer them alternately with

the grated cheese in a deep, buttered 1 1/2 quart casserole dish. Mix

the beaten eggs, butter, salt, pepper and cumin powder. Pour this

mixture over the peppers and cheese.

Bake 35-40 minutes at 350 deg F.

This is a spicy, soufflé-like dish.

There you go. I hope it's the one you are looking for. The only other

chili recipes in the book (my edition is 1991) are

chilequiles

chili con queso

chili sauce

maverick chili

plus a section headed 'cooking chilis'.

Cheers from Marie in Haarlem, Netherlands
