Adapted from Vegnomicon by Isa Chandra Moskowitz & Terry Hope Romero 1 block of well pressed tofu (cubed and baked at 400 for 15 minutes placed in marinade while still hot) 3/4 cup veg broth 2 tblspsoy sauce 2tbsp apple cider vinegar 2 tbsp liquid smoke 2 tbsp olive oil 2 tsp maple syrup 2 cloves of garlic crushed Marinate the tofu overnight at least. I have left it in for up to 3 days. Pan sear the tofu. after allpieces are nicely browned on all sides pour the marinade over the tofu in the hotpan and allow it to reduce down to a glaze. Allow to cool for 5 to 10minutes then dig in. I double and triple this recipe onaregular basis. Let me know what you think. And I'm definitely interested in that book (I'm 15 on the waiting list at the library, so I think I'm just going to order it from Amazon!)! I'm going to try this today!
