pizza sauce

To those of you who make your own pizza:

 

We did a kitchen remodel last summer, and my new oven makes a great

crisp crust. For many years I have been making the sauce by seasoning

tomato sauce to my taste. However, that comes out of the oven a bit

watery, and that is at counter purposes to my nice crisp crusts.

 

What do you do for your pizza sauce?

Mix some tomato paste with your tomato sauce for a thicker sauce.

I love making pizza from scratch. I never use sauce. If I want

tomato to be featured I take a very sharp knife and slice a few

tomatoes as thinly as I can. Then I spread them on the pizza so it is

covered with tomato slices. I find this gives the best combination,

you get plenty of tomato flavor but it is not overpowering and best of

all the pizza does not get soggy. I usually put a thin layer of cheese

right on top of the crust, then the sliced tomatoes, other toppings,

and a little more cheese on top. It can also be made cheeseless, if I

do this I use roasted eggplants.
