Guest guest Posted March 29, 2006 Report Share Posted March 29, 2006 I made Burgundy un-meatballs with wild mushrooms over polenta. I made the recipe for a recipe contest and it came out great. Also an Italian roast potato dish that can be served warm or as a nice summer salad. I love to cook and create new recipes, and would love to exchange with anyone interested. I'll have to get my son to show me how to send some of my recipes to the site. If I do it lord knows what you'll be sent,. Guest guest Posted March 30, 2006 Report Share Posted March 30, 2006 Hi Peter Here's the recipe (from Ronny's cake book:- Grated Lemon rind 6oz Self Raising Flour 1 teaspoon Baking Powder 6 oz Caster Sugar 40 grams Egg Replacer 4 oz Margarine 4 tablespoons Soya Milk 75 ml cold Water Juice of 1 Lemon 4 oz Icing Sugar Pre-heat oven to Gas Mark 4/175°C. Line tin with baking parchment. In a bowl - sift together the flour, egg replacer powder and baking powder. Add the grated lemon rind and caster sugar. Mix. In a small saucepan – gently melt the margarine. Measure out the cold water, and the soya milk. Pour the melted margarine into the dry ingredients and mix. Pour in the water and soya milk and mix to a thick, smooth batter. Transfer the mixture to the tin, smooth the top with back of spoon. Bake for 40 mins (Gas 4/175°C). Near the end of the cooking time – sift the icing sugar into a bowl and mix to a runny consistency by adding the lemon juice gradually – about 1 teaspoon at a time. When the cake is cooked – Remove from oven, keep in the tin, and place on cooling rack. Immediately, gradually pour the icing mix over the top, to cover the cake, and leave until completely cool.
