New Vegans - Lentil Loaf

I'm not Zelda but I made Donna's Lentil Loaf last weekend and it is

yummy! It's my lunch this week with garlic smashed potatoes, spinach

& roasted beets. Here's Donna's recipe:

 

" Lentil Loaf "

> 3 c veg broth

> 2 c oats

> 1 c ketchup

> 2 heaping tbsp mayonnaise (vegan version)

> 1 tbsp worchestershire sauce (vegan version)

> 2 tbsp soy sauce

> 1 tbsp minced garlic

> 1/2 cup sliced almonds

> Bring the broth to a boil and add lentils. Simmer

> 20

> minutes. Turn off

> heat and stir in oats, 3/4 cup ketchup, mayonaise,

> worchestershire sauce,

> soy sauce, garlic, almonds, and 1/2 cup water.

> Stir

> well and place in a

> greased loaf pan. Top with remaining ketchup and

> at 350 degrees for 30

> minutes. Serve with mashed potatoes, mushroom

Thank you Diane! by oats do you mean rolled oats or oat groats? (as

in the whole grain). Rolled oats is what you would make breakfast

oatmeal. It must be the rolled oats since the oat groats would take

too long to cook, right?

It's Donna's recipe but I just used organic long cook oats like I

would use for oatmeal, not groats. This loaf is way yummy.

No, don't use the pink lentils in this recipe. They cook up too soft.
