I love walnut or avocado or hemp oils on my salads. The Skinny Bitch book which I just finished says you can have some oil (this is Vegan). The recipes that I am finding use some oil. Which is right? are we supposed to use oils or not. Guest guest Posted February 7, 2008 Report Share Posted February 7, 2008 You absolutely need some healthy fats in your diet in order to absorb all the micronutrients in your food. The Eat to Live book does recommend healthy fats in the form of (limited) seeds, nuts and avocados. What Dr Fuhrman does not recommend is plain oil. His reason for this is that oil contains a lot of calories and very little nutrients. He prefers that you get the most nutrition per calorie and you get more nutrition and fiber from the flax seed than the flax seed oil or the sunflower seed rather than sunflower seed oil. But you do need some healthy fat in your diet, just not necessarily oil.
