Microwave Carrot Dip

 

1 pound carrots, peeled and thinly sliced

1/4 teaspoon ground cumin

1/4 teaspoon cayenne

1/4 teaspoon chili powder

1 tablespoon orange juice

2 teaspoons extra-virgin olive oil

 

Place all ingredients in a microwave proof dish. Cover tightly, cook on high 10

to 12 minutes or until carrots are very soft and tender. Pour into a food

processor and blend until smooth.

 

Yield: 8 servings, about 1 3/4 cups

Prep Time: 15 minutes

Cook Time: 12 minutes
