Guest guest Posted February 14, 2008 Report Share Posted February 14, 2008 I just made this up and they turned out great! 3/4 cup Bob's Red Mill Wheat Free Biscuit and Baking Mix 1/2 cup quick cooking Oatmeal 1 tsp Baking Powder 1/2 tsp Ground Cinnamon 1/4 tsp Ground Nutmeg 1/2 cup mashed Bananas 2 tbsp applesauce 4 tbsp Agave Nectar 1/2 cup light Coconut Milk 1/4 tsp Banana Extract Mix dry ingredients; Mix all the rest in a separate bowl then combine with dry and stir until you have a batter. Spoon into paper muffin cups (or a well greased muffin pan), and bake at 400 for 20-25 minutes. The first batch I made got too brown on the top, so I laid a piece of Aluminum Foil over them once they got brown on the second batch. I prefer using those little muffin papers in the pan instead of greasing, so there is essentially less than 1 gram of fat per muffin (from the coconut milk).
