Guest guest
For dinner tonight I made gluten steaks (seitan) and wow were they so good. The tasted (and were textured) just like country fried steak. I served them with potato cakes. I also made a gravy out of the broth I cooked them in. We snacked alot before dinner tonight so I didnt bother with any other sides. Everyone was pretty full already. Im not sure if the recipes are already in the files here but I will share how I made mine. Gluten Steaks 2c gluten flour 1tsp onion powder 1tsp garlic powder a few good shakes of Tony Chachere's herbs and seasoning 1 1/4c chicken like broth 1tbs soy sauce 1tsp sesame oil combine dry ingredients and wet ingredients separately. add the liquid mixture all at once. mix together (I had to add little more liquid as it was too dry and wouldnt hold together) form into a ball and knead about 15 times. Let rest. While resting make a broth of chicken like bouilion, chopped onions and chopped celery bring to a boil and simmer add seasoned salt to broth. form the ball of gluten into long logs and slice. Stretch each slice until it is fairly thin. place in broth and continue until the gluten in all in the broth. cook for about 30 minutes. Take out of broth and drain. bread the steaks by dipping in soy milk and then in a mixture of nutritional yeast, cornmeal, and flour. Fry until golden brown. Potato Cakes 2-3 c mashed potatoes 2-3 Tbs flax eggs scant 1/4c flour mix all together and drop by spoonfuls into a hot greased frying pan. fry flip and flatten until golden brown.
