I don't have an exact recipe, but this is basically what i did... slice 1 large eggplant soak in salt water till the water starts to get dark drain and rice eggplant slices broil (grill) eggplant slices on cookie sheet about 15 minutes, flipping halfway through - eggplant should be cooked but not withered... layer like lasagna: tomato sauce eggplant riccotta / cottage cheese tomato sauce mozzarella tomato sauce eggplant riccotta / cottage cheese tomato sauce mozzarella basically, use the eggplant instead of the noodles. I think it would be very difficult to rice uncooked egglant, no matter how long it has soaked. It would require a lot of muscle. If I could get it riced, how would I then form the eggplant into patties that could be baked - wouldn't it need some sort of binder? The rest of the recipe looks yummy. I just don't understand the eggplant preparation. Could you elaborate please? I let it stand at room temp till it gets soft and mix in dried basil, oregano, and garlic. You will be amazed at the extra flavor. Thanks!
