Drain. Heat cooking oil in a wok or deep skillet and add ginger, garlic and green onions. Stir-fry 2 minutes. Add drained noodles and stir-fry another minute or so. Add tamari sauce and black pepper and bring to a boil. Serve at once. Make 4 servings. Per serving: Calories 141; Total Fat 7g (sat fat 1g); Fiber 1g; Carbs 17g; Protein 5g; Chol 0mg; Sodium 651mg. Japanese buckwheat noodles can be used in much the same way as Chinese egg noodles. They have a good flavor of their own and need punch flavors to go with them. Tamari is Japanese soy sauce.
