Japanese Noodles with Tamari Sauce - 3 pts, Carbs 17g, Fiber 1g

10 ounces Japanese buckwheat noodles -- (soba)

2 tablespoons cooking oil

2 tablespoons grated ginger root

2 cloves garlic -- peeled and crushed

3 green onions -- (2-3), minced

3 tablespoons tamari soy sauce

freshly ground black pepper

 

Cook noodles as directed on package. Drain.

 

Heat cooking oil in a wok or deep skillet and add ginger, garlic and green

onions. Stir-fry 2 minutes.

 

Add drained noodles and stir-fry another minute or so. Add tamari sauce and

black pepper and bring to a boil. Serve at once.

 

Make 4 servings.

Japanese buckwheat noodles can be used in much the same way as Chinese egg

noodles. They have a good flavor of their own and need punch flavors to go with

them. Tamari is Japanese soy sauce.
