Spaghetti with Sunflower Seeds - 6 pts, Carbs 33g; Fiber 3g

Amount Measure Ingredient -- Preparation Method

3/4 pound dried pasta

2 ounces sunflower seeds

1 1/2 ounces sun-dried tomato paste

2 cloves garlic -- peeled and crushed

freshly ground black pepper

olive oil

1/3 cup fresh herbs -- chopped or shredded

freshly grated Parmesan cheese

 

Cook spaghetti in slated boiling water 8-10 minutes or as directed on package.

 

In a dry skillet, toast sunflower seeds until golden.

 

Allow pan to cool slightly. Stir in tomato paste, garlic, pepper and a little

olive oil, depending on how much there is in the paste. Stir over medium heat

for about 1 minute.

 

Drain cooked spaghetti and place in a heated serving bowl. Stir in sauce and

herbs.

 

Serve with more olive oil and Parmesan cheese.

NOTES : This sauce may seem a bit too dry when you are making it, but it's fine

once it is mixed with the pasta. So avoid the temptation to add too much oil or

the flavors will be diluted. Good herbs to use are sage, mint and thyme.
