Guest guest Posted February 16, 2008 Report Share Posted February 16, 2008 * Exported from MasterCook * Spaghetti with Sunflower Seeds - 6 pts, Carbs 33g; Fiber 3g Recipe By :Quick After-Work Vegetarian Cookbook by Judy Ridgway Serving Size : 4 Preparation Time :0:00 Categories : LowCal (Less than 300 calories LowerCarbs Quick Veggie WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound dried pasta 2 ounces sunflower seeds 1 1/2 ounces sun-dried tomato paste 2 cloves garlic -- peeled and crushed freshly ground black pepper olive oil 1/3 cup fresh herbs -- chopped or shredded freshly grated Parmesan cheese Cook spaghetti in slated boiling water 8-10 minutes or as directed on package. In a dry skillet, toast sunflower seeds until golden. Allow pan to cool slightly. Stir in tomato paste, garlic, pepper and a little olive oil, depending on how much there is in the paste. Stir over medium heat for about 1 minute. Drain cooked spaghetti and place in a heated serving bowl. Stir in sauce and herbs. Serve with more olive oil and Parmesan cheese.
