I am allergic to peppers - bell peppers, pimentos, & all chiles. Since many vegie recipes use peppers, is there any substitutes for peppers, bell peppers specifically? What do peppers do to me? Since they are a nightshade vegetable, they aggravate my arthritis (most night shade vegies do). Nightshades are bell peppers, white potatoes, eggplant, tomatoes & tobacco. None of the other vegies bother me & I don't eat tobacco (don't know anyone who does-LOL). Any suggestions would be helpful & appreciated. After some reading, I found that the issue was the solonene in the veggies. Apparently, it is toxic to us poor humans. Stays in the system for about 3 days. With some of the veggies, i.e. potatoes, eggplant etc. it is in the skin, so if you peel them, you should be able to eat them with no problem. For peppers substitute, my gram liked diced squash stir fried as a substitute. Hope that helps. Also for Gram, Dr. gave her milk thistle tablets to help her liver which wasn't quite up to snuff. In fact, I made red pepper sauce, which I love, & that's what made me notice the problems. I get muscle spasms in my neck & shoulders. Its quite painful. When I stopped using the red pepper sauce, the spasms stopped. Now, about 2 0r 3 days afterward, if i accidently ingest peppers, it feels like I've been hit with a board between my shoulder blades. I have had to stop eating zucchini, which I love, because of allergies, but at least I can still eat yellow summer squash which works in recipies just the same.
