I steam it and dot with butter. Also make a pasta dish by cooking penne

pasta and sliced asparagus together, drain and add olive oil and crushed garlic.

Top with some grated cheese and it is very good.

Yesterday I picked some up at our Winn Dixie for $2.49/lb. Very good price.

I'm looking forward to steaming some up and also making some soup with it...

Is everyone else finding asparagus delicious and inexpensive right now? I've

Gene here eating asparagus every day. I have put it in salads, braised

it with garlic and eaten it freshly steamed. I doubt I could ever get

tired of asparagus.

I steam it, toss with olive oil and some red pepper flakes and smoked

paprika.

Yesterday, we steamed some fresh asparagus and then put the asparagus in a

hot skillet with some smart balance spread, a little fresh ground salt and

fresh minced garlic and sauteed it. It was sooooooooo good. We did it in

spears and ate it like finger food.....

Asparagus love! I eat it at least twice a week now that it's on sale!

 

I dice asparagus into 1 " cuts and toss it into a steamer with 1 or 2 freshly

sliced garlic cloves for 15 - 20 minutes - mixed with other veggies, of course!

My man can't digest " uncooked " or hard veggies, poor thing, that's why they're

steamed for so long. But oh, they come out very tender and OH so tasty with a

little salt and pepper, or with a little soysauce and mirin on white rice. Very

simple, filling, and oh so good. :)

I never have liked it much, going to give it a second try. I still have yet

to go full veg, but I so want to. My family isn't supportive, and I am a

zombie from dealing with a four month old who refuses to sleep through the

night, and cries constantly if he's put down. I need recipes that are so

simple I can throw them together while holding a baby. :)

Do you have a baby sling, Alia? They are great for this kind

of thing. Mom of 7 here.....been there too. It will get better.

I do. I need to get it out, and use it. I hate having to let him cry to do
