waxed VEGETABLES --food for thought

Bill (and everyone),

In my opinion this is one of the big reasons Americans are not getting

proper nutrition.

When the majority OCCASIONALLY attempts to eat healthy, they're being fooled

into

thinking their " fresh vegetables " are actually safe and, well, fresh.

I had recent occasion to be in the regional warehouse of the nation's

largest food

distributor. ACRES of warehouse where trucks bring in shipping containers all

day to be

unloaded, sorted, stored, etc - and all day trucks picked up loads and loads to

truck

around the country.

Even at Whole Foods, I see produce marked " ORGANIC from PERU or some

faraway

place. It wasn't until I visited the warehouse that the bell went off. This

stuff is picked,

packed and delivered to a shipper, put into shipping containers - then shipped

thousands

of miles, unpacked, trucked to a central warehouse somewhere, unloaded, stocked,

then

pulled again, loaded again onto a truck, driven to stores across the country,

unpacked,

stocked, put on shelves when there is space, and sits there until a well meaning

consumer

thinks, " oh, fresh vegetables tonight. "

It's a two fold problem - Most grocery chains carry little or no ORGANIC

produce, and,

as Bill points out, what they do carry is waxed or worse. I wonder what they

spray in those

shipping containers to kill bugs etc, while in transit from foreign countries.

Then there's

the issue of non-organic fertilizers and pesticides which may have been used.

Second,

and this is the one I never thought of until recently, just how old are these

" fresh "

veggies? At least a week - maybe two - maybe even three! How " FRESH " are they?

I have heard that it's far more nutritious to eat frozen vegetables if you

can't find locally

grown. The reason being that they flash freeze them, often the day or day after

they are

picked and it locks in the nutrients and minerals. As opposed to the nutrients

and

minerals dying and decaying, which they start to do as soon as the product is

picked.

This is one reason I grow my own vegetables, or buy only from the organic

vendors I

know at the local farmer's market. I'm lucky to live in Southern California,

surrounded by

organic farms, which produce year round. For those of you in colder climates,

you may

want to think about eating more frozen during the winter!

I have been reading the messages on waxed vegetables with interest.

 

I sent in a post last week about our local Farmer's Market. I said that I

found out that many of the vendors were getting their produce from a food

terminal. I was very upset.

 

I believe in the hundred mile rule. It is not always safe to buy food from

further away from where you live than this.

 

Whenever possible I buy right from the farmer. I agree that in winter it is

better to eat frozen vegetables.
