wHi new member in mesa Arizona. I grow an organic garden (to the best of my

meager ability in the desert) This is my second season, I'm planting my " summer "

garden next week. All of it will be crispy fried by July 4th. I enjoy camping

with my husband and 6yo daughter in our pop up camper. we are planning to go to

the Grand Canyon this summer. I'm a veggie for health, my family are meat

eaters-though not veggie haters. Just signed up for bountiful baskets, would

like to do organic co-op too. Love to hear from other desert dwellers and anyone

else too. I LOVE to cook, and Iv been mostly veggie for the past 10 years,

sometimes more than others, but now I'm really serious and I need HELP and

support in making the full transition. Like I bought ice cream yesterday cause

it was on sale. My husband is lactointolerant so he cant eat it, so I guess my

daughter will chow on most of it. But gosh, I love ice cream and vegan ice cream

is so expensive! So these are my luxury problems.

I'm a recovering 12step-er, and yoga enthusiast, hope to be a teacher some day.

But mostly I'm a wife/mom/pt office worker/chef/housekeeper/tutor/non church

going christian/spiritually evolving woman. Thats my introduction, covers alot

of topics. Also I love mountain biking in the desert, hiking and my life long

dream is to hike the Grand Canyon rim to rim. And btw, if anyone has done that,

just what would you plan for meals on an overnight backpaking trip like that?

Welcome Daphne.

 

I am an avid backpacker. About a year and a half ago I backpacked the

whole John Muir Trail in 16 days, with one resupply point. This means

carrying everything you will eat for 8 days. It should be light,

non-perishable, vegetarian (by choice), and nutritious. One can hope

for tasty too.... It is not easy!

 

I came up with 5-6 nice backpacking recipes that I can post here if

you or anyone in the group is interested.

 

These recipes assume that you will have water available to use from

streams and rivers, lakes. Water can be purified with tablets or

filtered. When you are backpacking in the GC you might not have

water. I have done a couple of trips there, and also on some of our

dry San Bernardino mountains. Packing your food will depend on

whether you will have water or not. I am afraid that your best choice

in desert areas is GORP (some trail mix) bars of your choice, and also

vacuum packed sandwiches.

Hi Sarah - Welcome to the group! New veggies are always welcome, and those who

know a bit about it from their childhood are especially interesting because you

have a couple of generations' take on it :) How about the three littlies? Are

they okay about fruits and veggies? Just wondering . . .

Thank you for the welcome. My DS(7) does not like veggies and I have to hide

them in everything(i.e.meatloaf with/veggies inside), but he will eat just about

any fruit. DS(2) will eat what ever I eat and seems to prefer raw foods over

cooked ones. DD(4 months) is still strictly breastfed. I am definetly going to

use the recipees for help. I love Curry's and tofu(crumble, fried with tumeric

and mushrooms YUMMMM). Right now I just want to make sure that I am still

getting enough protein, especially since I am still BF. How much protien does a

person need in a day? Also I haven't yet told my inlaws that I am veggie.

Tomorrow night I will be having dinner with them. I am just hoping that there

will be the perfuntory salad. Anyway, HOpe everyone is doing great today.

Hi Sarah!

Aren't kids remarkable - they develop such phobias about vegetables and yet,

only a little while earlier, they loved 'em all as long as it was what mama ate!

:) I have long forgotten how to cope with kids' and food, I'm afraid, but there

are lots of people here with experience!!! As for the protein for you, here's a

chart that might help a bit:

As for your inlaws, it might not be a bad idea to let them in on the secret of

your vegetarianism some time LOL especially since they'll wonder why just the

Howdy Pat,

 

Thank you for the link. I just did my food calculations on Sparkpeople.com

and it apears that I am keeping within what I need for protien. I went ahead

and told my MIL, she is very understanding and related to me her own dietary

changes(eliminating sugar). I am sure that I will get a little razzing from my

FIL but he would do that no matter what changes I was making. As an added

benefit, since starting my new life I have dropped 3 lbs. WOOHOO.

My MIL is married to a lifelong rancher, so you can imagine how he

feels about us being vegetarian! MIL still thinks hubby and DS should

eat meat, or they will be sick, not grow properly, etc.

 

Haven't told her we are now gluten-free, casein-free, corn-free.

She'll go through the roof!
