Here's another recipe, but with cumin....

 

Vegan Seitan Gyro W/ Cucumber Sauce Recipe #252303

This is such a filling, hearty, flavorful meal that I can never get enough

of. It took a while to develop the cucumber sauce recipe, but I think I just

about nailed it!

45 min | 40 min prep | SERVES 6

For the sauce

 

1 cup soy yogurt, unsweetened

1/2 large cucumber, peeled and grated

1 tablespoon lemon juice, fresh

1 teaspoon dried dill weed

1/2 teaspoon salt

 

fresh ground pepper, to taste

1 teaspoon turbinado sugar (to taste)

 

For the seitan

 

1 lb seitan, shaved into thin, bite-sized bits

1 tablespoon vegetable oil

2 garlic cloves, minced

1 teaspoon cumin

2 teaspoons oregano

1 pinch cinnamon

1 pinch nutmeg

1 pinch cayenne pepper

 

salt & freshly ground black pepper

 

For the sandwich

 

2 small tomatoes, diced

1 onion, diced

3 cups lettuce, shredded

6 pieces pita bread, warmed

1. Peel and grate the cucumber. Put the grated cucumber into a

strainer and set in the sink for 10 minutes to drain.

2. Squeeze the cucumber to remove excess moisture and place into a

small bowl. Add the remaining ingredients and stir well to combine. Cover

and place in the fridge to let the flavors meld while you cook.

3. Heat the oil in a pan over medium heat. Add the seitan bits and

garlic and stir until the seitan begins to brown. Add all of the seasonings

and stir well. Sautee until the seitan is well cooked and fragrant. Turn off

the heat.

4. Assemble the sandwich with the shredded lettuce, diced tomatoes

and onions, cooked seitan and cucumber sauce. Eat open-face or fold up and

hold on tight!

Does anyone have a recipe for meatless gyros? Hopefully the recipe

will have the cumin flavor. Gyros is my brother's favorite sandwich,

but is willing to try a meatless version.

 

I want to do a meatless Greek night. I have a recipe for dolmas. What

else would anyone suggest.

In the files are my recipes for tzaticki and gyro bread, both easy and soooo

good. The bread is so soft & Yummy.

I LOVE Greek food. You could make some Spanikopita (spinach pie)for

appetizers. Here's a GREAT recipe for " Greek Night " from the group

files...Its called Greek Rice with Spinach posted by Candy...I make

this one often. I have subsituted the feta with a strong shredded

parmesan a few times and its yummy too. I also add quite a bit of

Italian seasoning to it instead of the basil. Even without the cheese

and a bit more lemon juice...Mmmmm, maybe I'll make some more tonight :)

 

Greek Rice with Spinach

 

1 1/2 tablespoons olive oil

1 large onion, chopped

2 cloves garlic, minced

4 cups chopped, clean fresh spinach

3 tablespoons lemon juice

4 cups cooked long grain rice

1/2 tablespoon minced fresh basil

salt and pepper, to taste

1/4 cup crumbled feta cheese

 

In a skillet, add oil, onion and garlic; cook over medium-high heat 5

minutes. Add spinach, lemon juice and rice. Cook stirring frequently,

until spinach is limp and rice is thoroughly heated. Toss with basil.

Add salt and pepper, to taste. Add crumbled feta before serving. Serves

4.

Sounds wonderful. I have a few baklava recipes in the file. Now I will be

craving it.

Wow!!! Some great ideas. I'm looking forward to trying them. As I said, I

m hoping to put them together with other meatless Greek food items as a type

of Greek plate. How does this menu sound:

Gyros, dolmas, rice pilaf, spinakopita, and baklava

I would use seitan marinated in chimichurri and grilled. I would add

a little fried cumin to it too.

Oh wow this sounds delicious, and I just made a huge batch of seitan

too! yum yum....
