Salsa Salu - Uruguay

2 garlic cloves

2 large onions

1 red pepper or hot pepper

1 carrot

2 green olives

2 black olives

3 ripe tomatoes

1 cup broth

1 teaspoon black pepper

10 tablespoons olive oil

1 tablespoon salt

1/2 cup white wine

1 bay leaf

1 bunch fresh rosemary

1 tablespoon flour or corn flour

1/2 tablespoon ground red pepper

 

Either chop very fine or use a food processor to blend all the ingredients.

Simmer for 45 to 60 miuntes, stirring frequently, until the flavors are blended

and the sauce is thickened.

 

 

 

Salsa Salu from Uruguay combines fresh vegetables, herbs and peppers in a

flavorful sauce that complements any meat entree. Try it with your next steak or

barbecue, and enjoy it like the Uruguayans do, as a sauce for a parrilla, or

grilled meat.
