I never work with measurements and the recipe doesn't have many, sorry. I always made this to serve two. Some folks don't like the idea of vegetarian dishes that resemble meat, not sure about your daughter. I think it's at least a good way to introduce people to different foods, by making them a bit more familiar. Saw other suggestions here as to turkey substitutes, never tried them but you might want to as the tofu doesn't greatly resemble turkey in this dish, it just gets the taste from the gravy. Lady B's Mock Turkey Tofu with Gravy firm tofu asparagus scallions peanut oil - no substitutions please, the flavor depends on it flour soy sauce powdered nutritional yeast one lb of firm tofu or 2 large cakes from the asian market - slice as thinly as you would for turkey or as thinly as possible for frying fry tofu lightly in peanut oil (only! *do not substitute other oils!*) and set aside to drain on paper towels boil or steam 1 lb fresh asparagus in approx 2 cups of water, set asparagus aside to be reheated - save water using the tofu pan, add approx 2-3 tbs peanut oil and lightly stir fry 2 or 3 chopped scallions - white and green ends both - do not brown add 2-3 tbs of flour to peanut oil and scallions, stir to make a roux which should be slightly thick but workable add asparagus water slowly to the pan, stirring smooth as you add it, to a gravy consistency - should be slightly thick add 2 tbs of a GOOD naturally brewed dark soy sauce (Pearl River Bridge's Mushroom Soy is what I use and recommend, you can get it at any Chinese market), boil to gravy consistency again if necessary turn off heat and add 2-3 tbs of nutritional yeast, stir or whisk till smooth taste for flavor, should look and taste much like turkey gravy, adjust seasonings to your own tastes (usually the soy and yeast makes it) add tofu to hot gravy, let sit for 5-10 minutes to absorb the flavor of the gravy, reheat in microwave if absolutely necessary before serving - please note that nutritional yeast should not be boiled serve with reheated asparagus, eat and enjoy!
