For a variation on this recipe try adding a can of black beans to the

rice mixture. Yum!

I have a bag of anasazi beans and was just thinking this would be

a perfect recipe to include them in.

I've made excellent tacos in the past using bulgur wheat and seasoning

it with taco seasoning, etc. Even my daughter and her boyfriend liked

them!

I also do this with baked potatoes. They are yummy! I add cilantro .

I am going to make tacos this week by mashing the avocado with a can of

chickpeas as the " meat " filling. Then top it with mixed greens (my fav) and

Tofutti Sour Cream. I am not big on tomatoes, but I LOVE salsa, so that will

probably get added, as I like really sloppy tacos! :)

another meat sub for tacos that is my favorite is the Quorn brand ground *beef*

I know people must think I work for Quorn, but I am telling you, it rocks.

Can you only get Quorn at the hfs? I never see it in my chain grocer...
