Guest guest Posted March 9, 2008 Report Share Posted March 9, 2008 Slow Cooker Cheesy Potatoes a very good recipe from Mary in Marys_Recipe_group from 1 and a half years ago 1 (32 ounce) package frozen Southern-style hash brown potatoes 2 (10.75 ounce) cans condensed Cheddar cheese soup 1 (12 fluid ounce) can evaporated milk 1 (2.8 ounce) can French fried onions, divided Grease your slow cooker with cooking spray or shortening. In a large bowl, stir together the hash browns, cheese soup, evaporated milk, and half of the French fried onions. Pour into the slow cooker. Cover, and cook on High for 4 hours, or Low for 8 hours. Top with remaining onions just before serving. Need Gluten Free, Wheat Free, Casien or Dairy free Come check out the New group for gluten Free Recipes. Guest guest Posted March 9, 2008 Report Share Posted March 9, 2008 You will have a mess stuck to the bottom of the crockpot if you don'ty have some thick stew type broth or a creamed soup for this recipe. I have tried it several times and it just doesn't work. A can of low fat low salt cream of mushroom soup was a close as I could come. I would like to use fresh potatoes, chese and onions. Thanks - Rachel I make mine with fresh potatoes. I shred them, peel and all, probably 2-3 pounds worth. Then I use 1 pound of shredded cheddar cheese, 1 pound of sour cream, 2 cans of cream of mushroom soup, and 1 onion, finely minced. When you shred the potatoes, don't squeeze the water out of them, it will help keep the dish moist. You don't cook the potatoes first, just mix all together and place in a greased crock pot. Cook on high for 4-6 hours or low for 8-12 hours. You can also make them in a greased casserole dish in the oven. If I do that I add a topping of crushed corn flakes and a little melted butter, and cook them at 375 degrees for 75 minutes, covering the top with foil for the first 45 minutes.
