Guest guest Posted March 9, 2008 Report Share Posted March 9, 2008 @@@@@ 15 Minute Couscous Torte 2 cups apple juice 1 cup couscous Juice and grated zest of 1 orange Place apple juice, couscous, orange juice and zest in a medium saucepan over medium heat. Bring to a boil. When boiling, reduce heat to a simmer. Simmer, stirring occasionally, for 10 minutes or until thickened. Spread the couscous mixture into a 9 " springform pan. Smooth top. Allow to cool for 2 hours. After it is cool, it can be topped with orange marmalade, roasted pecans (for those who can eat them), and a fat free whipped topping, if desired.
